Souffle Pancakes are all about the eggs. Souffle Pancakes are all about the eggs. The egg whites are beaten until stiff peaks form and then are folded gently and carefully into the rest of the batter. As a result, the pancakes are super airy, like souffle.
- Separate 2 eggs into white and yolk.
-Put 25ml (3TS) of milk into 2 yolks and fill 37g (3TS) of flour and mix
-I'll shuffle with egg white
-Put 1 ts of lemon juice or vinegar into 2 whites and using a hand mixer. Add 40g (3TS) of sugar 3 times every 30 seconds.
-If the meringue horn stands up, it's done
- Divide the meringue into the yolk batter and mix. Stir gently.
Place dough on low heat in a heated pan.
-Add some water, cover and bake for 4 minutes.
-turn over the dough carefully.

-If you touch the souffle side and the dough doesn't come out, it's complete~
Turn off the light, cover it, and take a little bit of time to keep it in shape.
